Even Organized People Have Brown Bananas
Here’s my favorite Banana Bread recipe (slightly modified from The New Moosewood Cookbook -Mollie Katzen) in response to The Rebel Housewife’s post.
- 1.5 cups (3 sticks) butter - softened
- 1.75 cups packed brown sugar
- 4 eggs
- 3t vanilla extract
- 1t orange rind
- 4 cups flour1t salt1/2t baking soda1T baking powder
1t nutmeg
2t cinnamon
2 cups pureed ripe banana soaked in 1 cup strong black coffee
1) Preheat oven to 350 degrees F. Spray 2 standard sized loaf pans
2)Beat together butter and sugar in large bowl. Add eggs one at a time - beating well after each. When mixture is fluffy add vanilla and orange rind.
3)Sift dry ingredients together. Add this to the butter mixture alternatly with bananas and ending with the dry mixture. Mix just enough after each addition to combine - do not OVER-MIX.Â
4)Spread batter evenly into the pans and bake 40-50 minutes until a probe inserted in the center comes out clean.
Your supposed to let it cool but lets be real! There’s at least one little person who’s been waiting for the treat to come out of the oven - I say cut it right away and blow on it to cool then EAT!!
